Baked turkey and stuffing picnic balls with tomato dipping sauce
This recipe was sent to us by Ali, one of our online blogger mums. Her challenge was to cook a kids picnic meal for under £10 using turkey.

What we thought:
These are really tasty and healthy too. These would also be good served fresh from the oven with the sauce hot. My guys loved them so much I may make them as party food at Christmas time and add cranberry sauce to them instead of tomato ketchup or puree to the turkey ball mix! 
Essential Ingredient:
Turkey Steaks
For the Baked turkey & stuffing balls you will need:

3 Turkey steaks

5 spring onions roughly chopped

2 garlic cloves

handful of fresh parsley

75g of stuffing mix

1 tablespoon of tomato ketchup or puree

1 teaspoon of chilli powder (optional)

1 egg beaten

finely grated zest of 1 lemon

Black pepper to season

A tiny amount of oil to lightly grease the baking tray.

For the tomato dipping sauce you will need:

1 onion finely chopped

1-2 garlic cloves crushed

1 teaspoon of olive oil

175g cherry tomatoes washed & roughly chopped

1 tablespoon of tomato puree

1 tablespoon of fresh parsley finely chopped

seasoning Black pepper and a little salt

1/2 chilli power or smoked paprika (optional)

1/2 teaspoon of sugar

To serve:
Serve with salad and tortilla wraps or pitta breads.
This turkey recipe is great for the summer holiday picnic season.
  1. For the turkey and stuffing balls:
  2. Put the turkey, spring onions, garlic and fresh parsley into a food processor and put on high for about a minute until you have your homemade flavoured minced meat.
  3. Put your minced meat into a bowl and add all the other ingredients. Mix together until all the ingredients are throughly mixed together. Hands are best for this.
  4. Shape the minced meat into balls about the size of cherry tomatoes. Aim for about 40. You could put these on a plate covered in the fridge until you are ready to cook them. They would be fine left overnight.
  5. Lightly grease a baking tray and pre-heat your oven at 190ºC
  6. Place the meatballs onto the baking tray and bake for 15 minutes or until cooked.
  7. Take out the oven and leave to cool ready for your picnic.
  8. While you were baking the turkey & stuffing balls make your sauce:
  9. Heat your oil in a frying pan and add your onions and garlic and cook for about 5 minutes until softening and just turning colour.
  10. Add your fresh tomatoes and seasoning. Cook for another 5 minutes until the tomatoes are soften.
  11. Add the tomato puree and fresh parsley and simmer for another 5 minutes. Blend until smooth.
  12. Taste and add sugar if needed. Put in a container or bowl and leave to cool.
