Diced Turkey with Chorizo and Chickpeas

Essential Ingredient:
Diced Turkey
400g Diced turkey thigh

2tbsp olive oil

1 onion, sliced

1 clove garlic, sliced

2 carrots, peeled and sliced

1 stalk celery, sliced

1 red chilli, deseeded and chopped

1tsp smoked paprika

Splash of red wine

1 x 400g can chopped tomatoes

200ml of stock

200g chorizo, sliced

400g can Chickpeas, drained


Chopped parsley

To serve:
Sprinkle with chopped parsley.
This is a great one-pot mealthat can be made in advance.
  1. In a saucepan, heat the oil then add the onions, garlic, carrots, celery and chilli. Cook for 5 minutes then add the diced turkey thigh and sear
  2. Add the paprika, red wine and the chopped tomatoes
  3. Then add the stock and bring to the boil
  4. In a separate pan, fry the chorizo for 2-3 minutes then drain the oil and add to the main saucepan
  5. Reduce the heat and cook for approximately 2 hours, seasoning to taste. If necessary thicken with a little corn flour and water
  6. Add chickpeas 5 minutes before end of cooking and heat through
  7. To serve, sprinkle with chopped parsley.
