It's time for a picnic! Delicious recipes for al fresco dining
Salads are ideal picnic foods because they're light, refreshing and can be bundled up efficiently into containers. These particular salads are especially delicious on a summer's day.
Marco Pierre White Waldorf Salad

Few salads are delicious enough to be immortalised in musical theatre, but the Waldorf makes it into Cole Porter's classic 'You're The Top' "You're the top/You're a Waldorf salad/You're the top/You're a Berlin ballad.” This is not without cause – the salad, which was invented in the late 1800s at the Waldorf Astoria in New York, is a combination of fresh apple, celery and walnut paired with a light white meat. What makes it extra useful for picnics is that the absence of salad leaves mean your salad is unlikely to droop or become claggy in the heat. Now that is the top.

Now, some of us do like a little more greenery in our salads and you're not likely to do better than this healthy twist on the classic Caesar Salad. Cos lettuce is great at keeping its shape and crispness over time and the turkey soaks up the salty, cheesy dressing, making the whole enterprise seem a lot more decadent than its calorie count would imply. Top Tip: Mix the dressing ahead of time but don't add until you've reached your destination. Allow a minute or so for the salad to absorb the dressing and then tuck in to one of the all-time culinary classics.
Turkey bubble and squeak patties

One of the the most desirable attributes of picnic food is the ease and comfort with which you eat it with your hands. Cutlery really is a lot of hassle on a hot day. With that in mind, these Bubble & Squeak patties are ideal to bring along with a selection of choice dips. Soy sauce and ginger work especially well in this case, although lemon juice also really brings out the zing in the turkey. Maybe, you just want to go classic with good old fashioned tomato sauce. Whichever way your heart leads you, these are an excellent portable snack.
Rice crispie turkey sticks

It would be tempting to say "These crispy little sticks are great for pacifying the kids!” but that would be ignoring an obvious truth: everybody loves crispy turkey sticks. Not only are these bite-sized snacks really easy to make, but they taste like the most incredible junk food, with a fraction of the saturated fat. In this case, tomato ketchup is an absolute must, but barbecue sauce and mayonnaise are also good choices. The crispie sticks pair extremely well with jacket potatoes but however you serve them the important thing will be to conserve your strength to fend off the kids – this recipe is too good to share!
