Turkey pie with crushed roast potato topping
This recipe was sent to us by Ali, one of our online blogger mums. Her challenge was to cook a meal using turkey leftovers.

If you are anything like me come Boxing day you really don’t want to be spending ages in the kitchen after all that big lunch yesterday took a fair while to prepare! But the great thing about Boxing day is there is always left overs and if there are not usually, I suggest you make sure there are this year as this recipe is so easy and yet so delicious too! 
Essential Ingredient:
Leftover turkey
Ingredients
250g of cut up left over roast turkey

Left over roast potatoes and any other roasted veg

Left over vegetables. If you don’t have much left over veg then add some pea’s

2 onions chopped

2 garlic cloves (optional)

1 x 250g tub of cream cheese

approx 50ml of milk

1-2 teaspoon of mustard

black pepper

Grated cheese for topping about 40g is enough

1 tablespoon of flaked almonds (optional)

a little oil



To serve:
Serve with seasonal vegetables.
This turkey recipe is flexible with left overs and perfect with any veg.
Method
  1. Heat a little oil in a large pan or frying pan. Fry your onions until softening and going golden brown
  2. Add 1 crushed garlic if using and cook for a further minute
  3. Stir in the cream cheese and add the mustard and black pepper
  4. Stir in the milk to loosen it up just a little
  5. Add your cut up turkey and left over veg (Not the roasted potatoes or parsnips) give a good stir and cook for 15 minutes on a low heat. Stir occasionally
  6. Preheat oven to 180ºC
  7. Whilst that is cooking roughly mash your roast potatoes and parsnips and mix in your other crushed garlic if using
  8. Put your turkey mix into a suitable ovenproof dish and top with the crushed roasted potatoes
  9. Scatter the cheese and flaked almonds (if using) on top and a good grind of black pepper
  10. Pop into the oven for 15 minutes until piping hot and the top is golden.
