Turkey and Broccoli Quiche
Essential Ingredient:
Leftover turkey
Ingredients
1 x 9-inch pastry case

½ tbsp sunflower oil

2 tbsp finely chopped onion

150g chopped fresh broccoli

150g chopped cooked turkey

100g shredded Gruyere or Swiss cheese

3 eggs

200ml single cream

1 tsp curry powder

½ tsp salt




To serve:
New potatoes and seasonal vegetables.
This is a great dish to prepare for picnics and parties.
Method
  1. Preheat oven to 220°C/425°F/Gas Mark 6.
  2. Heat the oil in a frying pan over a medium heat and fry the onion for 2-3 minutes until tender. Remove from heat.
  3. Boil the broccoli for approx. 5 minutes until tender and then drain.
  4. Stand the pastry case on a baking tray and place the broccoli, onion, cooked turkey and cheese into the pastry case.
  5. In a medium bowl, beat the eggs, cream, curry powder and salt together.
  6. Pour this egg mixture over the turkey and broccoli in the pastry case.
  7. Bake in the oven for about 20 minutes, or until the egg mixture has set and is firm to the touch.
