Turkey Mince
Ingredients
45ml Vegetable oil
1 Onion, chopped
1 Celery, chopped
1 Carrot, finely chopped
700g Turkey mince
400g can Chopped tomatoes
30mlHP sauce
10ml Mustard
15ml Dried mixed herbs
1 Chicken stock cube (300ml water)
1kg Potatoes, peeled and cut into pieces
50g Butter
200ml Milk
100g Cheddar cheese grated

To serve:
Savoy cabbage, carrots.
Turkey cottage pie is the perfect way to feed the family at the end of a cold day.
Method
Heat the vegetable oil in a large pan, add the onion, celery and carrot. Stir and soften for 3-4 minutes.
Add the turkey and brown evenly.
Add the chopped tomatoes, HP sauce, mustard and mixed herbs.
Crumble in the stock cube, add 300ml of water, stir to a simmer and cook for 25 minutes.
Boil potatoes in salted water for 20 minutes, drain and mash with butter and milk.
Turn the turkey mince into an ovenproof dish, topped with mash, scatter with cheese and bake in a preheated oven 200 degrees C, 400 degrees F or Gas Mark 6 for 25 minutes or until golden.
Serve with Savoy cabbage and carrots.

Turned out brilliantly! I was a bit dubious at first about adding that much mustard and HP sauce, the mince start to smell a bit vinegary after adding. But I needn't have worried, it all blended in beautifully as it cooked and the family thought it was delicious! Also I didn't have stock, so just added water, and still very tasty.

Great recipe - thank you.
I didn't have HP sauce but replaced with ketchup which gave the dish a sweetish taste; also no "normal" mustard in my cupboard so whole grain was added.
The finished meal went down very well with my children - 9 years and 3 years so I will be doing it again :-)
